Abstract

From our investigation, 9 plant species in Lam Dong that the ethnic minorities have been using for making traditional pipe wine were collected, including: Aphenandra uniflora (G. Don) Brem, Indigofera longicaudata Thuan., Laggera falcata>(D.Don) O. Ktze, Symplocos cochinchinensis (Lour.) Moore, Leea rubra BI. ex Spreng., Gonocaryum lobbianum (Miers.) Kurz., Diplospora singularis Korth., Crotalaria albida Heyne ex Roth, Rubia phillippinensis Elmer. From these plants, 2 pure strains of yeast (Saccharomyces SPl, Saccharomyces Sp2) and 3 pure strains of mold (Mucor spp., Rhizopus spp., Aspergillus spp.) were selected, having significance role in the making pipe wine process.
